A cut above the rest with Butcher Girl Alison

Alison Meagher, better known as Butcher Girl Alison, is on a mission to revolutionise the world of butchery. With nearly two decades of global slicing and dicing expertise, she brings a wealth of knowledge and passion to the meat industry.

Her brand, Butcher Girl Alison, is built on more than 10 years of diverse industry experience worldwide, combined with a lifelong connection to cattle farming and beef production.

Growing up on an Angus farm in Heywood, Victoria, presenting at the Neogen World Angus Forum in Brisbane this year will be a “full circle moment” for Ms Meagher, who will take the stage during the Gala Dinner. 

Alex McLaughlin from APlus News sat down with Ms Meagher to chat about the upcoming Neogen World Angus Forum, the latest trends in the meat industry, what's on the menu for Australians this Easter, and a few tips and tricks for getting the most out of your beef. 

Ahead of the Forum, Ms Meagher said she was thrilled to be involved. 

“Everybody is familiar with Angus beef all over the world – it’s very important,” she said. 

She’s especially excited to talk about underutilised secondary cuts. 

“I love debunking the idea that only the primary cuts – like tenderloin, cube roll, or porterhouse – are tender. 

“I enjoy showcasing cuts people might not have seen before, teaching them how to use them, and highlighting their versatility and sustainability.”

Ms Meagher holds a Bachelor of Applied Science (Food Styling) from RMIT University in Melbourne, where she began her career as a home economist, specialising in food styling and recipe development for magazines and trade shows.

Seeking to expand her skills, she interned in the United States before honing her craft at London’s Lidgates butcher shop.

Upon returning to Australia, she completed her Certificate III in Meat Processing at the renowned William Angliss Institute and further refined her skills in a boutique Melbourne butcher shop. She then took her expertise to Shanghai, China, where she became the go-to authority on Australian beef in Asia.

In 2019, Ms Meagher returned to Victoria, where Butcher Girl Alison truly took shape. Her mission is to educate, consult, and train butchers, industry specialists, and consumers alike—championing secondary cuts, revenue maximisation, and waste reduction.

Ms Meagher will share her insights through a live demonstration during the Gala Dinner event at the Neogen World Angus Forum, held at the Brisbane Convention & Exhibition Centre (BCEC) on 7–8 May 2025.
